PALEO ALMOND BUTTER COOKIES

GLUTEN FREE // PROCESSED SUGAR FREE // PALEO

These babies are so delicious, I can literally eat them all in one sitting if I’m not careful! They are incredibly simple to make and perfect for a quick breakfast on the go or post gym. Incredibly good for you and of course, tasty. This recipe makes about 12 cookies.

 

RECIPE

makes 12 cookies

1 cup raw or roasted organic almond butter

1 cup almonds, blended into flour (blend on high in a high speed blender)

1 organic egg or 1 flax egg ( 1 tablespoon flax with 1/4 cup water, gelled)

1 teaspoon cinnamon

1/2 cup maple syrup or raw honey

1 tablespoon Madagascar vanilla bean extract

1/2 teaspoon baking soda

1/2 teaspoon sea salt

1 cup crushed almonds for topping

METHOD

In a food processor combine almond butter, almond flour, egg, cinnamon, maple, vanilla, baking soda and sea salt. Pulse until dough forms.

Preheat oven to 350. Line a baking sheet with baking paper.

Use an ice-cream scoop to scoop out cookie and  place on paper, flatten with hand or spatula and top with crushed almonds. Bake for 15 to 15 minutes or until golden brown. Cool for at least 30 minutes before serving.
