I made these blueberry superfood waffles for Henry, my mom and I this morning. Henry asked for pancakes but I wanted to try out our new waffle maker, I made a egg free version because Henry has an allergy, but you could use eggs in place of the flax egg. You can also use grass fed butter in place of the coconut oil if you wish!
2/3 cup sprouted quinoa flour (I buy the sprouted quinoa and then blend in the the vitamix)
1/2 cup buckwheat flour
1/2 cup gluten free oat flour
1/4 teaspoon baking soda
1/8 teaspoon baking powder
1/2 teaspoon sea salt
1 1/2 -2 cups almond milk (as needed)
2 flax eggs
1/2 cup coconut sugar or date sugar
2 tablespoon coconut oil
1/2 cup blueberries
1/4 teaspoon Sun Potion Moringa Powder
1 teaspoon Detox Greens from Mattole Valley
Preheat waffle maker
Blend the dry ingredients the the vitamix (quinoa flour, buckwheat flour, oat flour, baking soda and powder, salt)
Pour into a bowl and set aside.
Blend almond milk, flax egg, coconut sugar, coconut oil, blueberries, moringa and detox greens together in the blender until smooth.
Add dry mix to blender and combine.
Pour 1/2 cup in each side of your waffle maker and let cook!
Top with berries, honey and enjoy with love!
