Chia Pudding Bowl

This is what we had for Valentines day breakfast, it’s clean, yummy and totally easy to make. My whole family (toddler included) loved it. I don’t really do oats so much, but I love breakfast bowls, this chia pudding bowl is a great alternative to oats and grains. You can even warm the chia up if you wish.

I love Chia because it keeps me full for a long time when I’m working a lot and don’t have time to stop for meals. This recipe can be made with a different sweetener if you don’t like stevia, I just prefer a no sugar version for my families needs. You can get creative and add more superfoods into the base, this is just a simple version to get you started! This recipe makes about 4 servings.

Chia Pudding Bowl

WHAT YOU’LL NEED

3 tablespoon almond butter

1/2 teaspoon powdered vanilla bean

1 tablespoon lemon juice

4 pack powdered stevia or favorite sweetener

1/2 teaspoon sea salt

3 1/2 cups water

2 cups chia seed

1 carton of fresh raspberries (frozen will work though)

1 carton of fresh blueberries

1 banana, sliced

handful of cashews or favorite nuts

2 cups favorite granola or nut + seed blend

METHOD

1)In a high-speed blender, combine the almond butter, vanilla, lemon juice, sweetener, sea salt and water. Blend until smooth.

2) Pour over 2 cups of chia and whisk with a fork. Let sit for about 20 minutes.

3) Once chia is thick, layer into a bowl with fruit and granola.

4) Enjoy with your whole body!
