Make it daily and change-up the superfoods for variety.
This is the perfect pairing for a fish dinner, or it can be loaded up with some healthy steamed broccoli and cauliflower. I like to load my salads up with lots of goodies.
1 large head of green curly kale, stems removed
1 tablespoon apple cider vinegar
1/4 teaspoon sea salt
1 avocado, pitted and sliced
1 pink lady apple, sliced
1/2 large cucumber, peeled and grated
1/2 cup parsley, roughly cut
1/2 cup mint, roughly cut
1/4 cup goji berries
1/4 pumpkin seeds
1/4 cup macadamia nut oil or a light olive oil
1/4 cup apple cider vinegar
1/4 cup raw local honey
small thumb fresh turmeric
1 tablespoon lemon zest
Black pepper and salt to taste
Blend together in your vitamix.
Cut kale and remove stems. Massage with apple cider vinegar and salt to break it down. This should be done for at least 2 minutes. Add all your toppings and massage some more! Get the avocado mushed in there. Then add your dressing and massage some more. Serve immediately for highest enzyme count!
