THE PERFECT SALAD FOR DETOXING
This is a very simple salad that intertwines flavor with function. For me when it comes to food I of course want to eat healthy and support my system, but I have to genuinely enjoy the food otherwise a part of myself gets left behind. Food is such an interesting topic for many of us, I’ve yet to meet a person on this planet that doesn’t have moments of suffering around food.
The last few years for me have been about going deep into that suffering and finding some peace with my plate. I’ve made it my work. What I’ve found is that there isn’t really such a thing (in my world) as balance. I really wish there was, but there just isn’t. One day I’m feeling really peaceful and centered and my meals are perfectly rounded (so maybe there is such a thing as balance in one day) the next I’m running from place to place, my emotions are running high and I forget to eat until 3:00pm… the next I eat an entire watermelon and snack foods all day.
The one thing I do try to be consistent on even on my watermelon days, is a huge delicious nutrient packed salad. I have greens in this form everyday because they keep the digestive system moving, keep the tummy full from the healthy fats and also give solid energy. A big salad has the ability to bring a bit of momentary balance to even the craziest day.
THE PERFECT DETOX SALAD RECIPE
2 cups fresh greens
1 cup arugula
1 handful radish micro greens
1 cup grated or chopped carrots
1 summer squash or yam chopped and baked in coconut oil
1 tablespoon chopped kalamata olives
1/2 ripe avocado
1/2 medium cucumber, peeled and cubed
METHOD
Pile high on your favorite plate
DRESSING
1/2 lemon, squeezed
1/4 cup extra virgin cold-pressed organic olive oil
1 tablespoon apple cider or clean vinegar
1 tablespoon cumin powder
1 teaspoon ginger, fresh and minced
1 pinch coriander
1/4 teaspoon sea salt
METHOD
Stir with a fork until well combined
